改造 kaizō, noun. To remodel. To take something apart and rebuild it from the frame up.

We boil pork bones for eighteen hours, cut our noodles every morning and pour wine from people who farm without shortcuts. We took the ramen counter apart and rebuilt it for the night.

One bowl takes a whole day. This is where today's bowl is right now.
